If you love mashed potatoes, wait until you try them in crispy, cheesy bite-sized form! These Loaded Mashed Potato Balls are packed with flavor and perfect for snacking, party appetizers, or even a fun twist on leftovers.
Ingredients:
• 2 cups mashed potatoes (leftover or freshly made, cooled)
• 1 cup shredded cheddar cheese
• ½ cup crispy cooked bacon, crumbled
• 2 green onions, finely chopped
• 1 teaspoon garlic powder
• ½ teaspoon black pepper
• ½ teaspoon salt (adjust to taste)
• 1 egg (for binding, if needed)
For Coating:
• 1 cup all-purpose flour
• 2 eggs, beaten
• 1½ cups breadcrumbs (Panko for extra crispiness)
For Frying:
• Oil for deep frying (vegetable or canola)
Optional Dips:
• Sour cream
• Ranch dressing
• Spicy mayo
Instructions:
1. Mix the filling: In a bowl, combine mashed potatoes, shredded cheese, bacon, green onions, garlic powder, salt, and pepper. If the mixture feels too loose, mix in 1 beaten egg to help bind it.
2. Shape into balls: Roll the mixture into golf ball-sized portions and place them on a baking sheet. Chill in the fridge for about 15–20 minutes to help them hold their shape.
3. Coat the balls:
• Roll each ball in flour, shaking off excess.
• Dip into beaten eggs.
• Coat with breadcrumbs, pressing gently to ensure an even coating.
4. Fry until golden: Heat oil in a deep pan to 350°F (175°C). Fry the potato balls in batches until golden brown and crispy (about 2–3 minutes). Remove and drain on paper towels.
