Easy Egg Bites
Egg bites are one of my fav go-to meal prep for busy mornings!! They can be stored in the refrigerator and freezer too!
I tend to make a few different flavors when I make mine.
DIRECTIONS:
-Preheat oven to 350 degrees.
-Combine eggs, cottage cheese, salt, and pepper in a blender.
-P.S. here is where I will split the mixture up into however many types of egg bites I am making. Usually 3 so there are four of each bite!)
-Add mixture into a bowl and stir in cheese. (Or separate bowls with different types of cheese. Ex: feta, GruyĆØre, mozzarella, etcā¦)
-Spray 12 ct muffin tin with non-stick spray and fill each about 2/3 full with mixture.
-Top each with bacon and bake for 20 minutes. (Or your choice of proteins or veggies!!)
Basic Bacon and Cheese Bites:
⢠6 Large Eggs
⢠4 slices Bacon cooked and finely chopped (or 1-2 slices if you do multiple flavors)
⢠1 cup Cottage Cheese
⢠1 cup Shredded Gruyere Cheese (or 1/2 cup with other flavors)
⢠1/4 tsp Salt
⢠1/4 tsp Pepper
