One of my favorite go-to recipes includes vibrant fruit bowls featuring strawberries, pineapples, and cucumbers. Preparing these fruit bowls is incredibly simple, and the ingredients keep well in the fridge for several days. I usually wash and cut all the fruits on Sunday morning, then portion them into reusable containers. Adding cucumbers to the mix adds a subtle crunch and balances the sweetness of the strawberries and pineapples. Sometimes, I sprinkle a bit of fresh mint or a squeeze of lime juice to enhance the flavors. These bowls are excellent for breakfast or as a tasty snack. I usually do my meal prep on Sunday. It takes about 1 hour to get everything prepped/cooked and put into containers. I make 5-6 meals for breakfast, lunch, and dinner. Saturday and Sunday I don’t necessarily plan ahead for those days so I eat whatever I am feeling. Meal planning never works for me
