If you're curious about the calorie content of shrimp Pad Thai, this homemade version tends to be lighter than restaurant dishes because it uses fresh veggies, controlled portions of peanut butter and honey, plus coconut aminos instead of heavier sauces. Shrimp is a great protein choice here since it’s low in calories yet high in nutrients. For those interested in variations, you can swap the shrimp for chicken, tofu, or even tempeh to suit your dietary preferences. Using Trader Joe’s rice noodles makes this recipe super convenient and easy to prepare in just one pan, cutting down on cleanup time. When making the sauce, feel free to adjust the sweetness or acidity by adding more honey or lime juice to fit your taste. And if you enjoy a spicy kick, adding sriracha is a great optional boost. Garnishing with peanuts, cilantro, and green onions adds a nice texture and fresh flavor contrast. This recipe also fits well for people seeking a healthier take on classic Pad Thai because it avoids deep frying and uses a nutrient-rich mix of vegetables. Overall, it’s a wholesome, satisfying noodle dish perfect for weeknight meals or when you want restaurant flavors at home without the extra calories.
