Low Carb Air Fryer Bagels

I get why these went viral! These air fryer bagels are so good.. bagels and cream cheese were always my favorite growing up but back when I started changing my eating habits when I found out that my PCOS was causing insulin resistance, I had to limit eating them regularly. These are made with almond flour and whipped cottage cheese so your blood sugar will stay balanced after eating and the protein will help with energy and post workout recovery! These are so addicting I’ve made them 3 times this week! I prefer the cottage cheese recipe over the Greek yogurt recipe because I thought the Greek yogurt bagels tasted too tangy and it threw off the smooth mild flavor that you want in a bagel. The cottage cheese worked perfect for this recipe.. it’s savory and balanced and you can add whatever bagel toppings that you like.

Low carb air fryer bagels (makes 4 bagels)

1 2/3 cups of almond flour

1 cup of cottage cheese (blended)

1 tsp baking powder

Bagel seasonings and toppings

Mix almond flour, baking powder, and cottage cheese together until a dough is formed. If the dough is too wet to form bagels then add a little more almond flour. You want a thick consistency like play doh. I use the roll a snake method and seal the ends together to form the bagel shape. Add bagel seasoning and toppings (I used everything bagel seasoning and shredded Colby jack and pickled jalapeños). The cheese and jalapeño bagels were chefs kiss!

Air fry the bagels for 15 minutes at 360f. Let cool and enjoy.
