Low Carb Creamy Chipotle Shrimp

My low carb creamy Chipotle shrimp is the perfect meal if you are craving something bold and spicy! The juicy shrimp cooks super fast and it’s a high protein dish that you can serve alongside your favorite vegetables. Make this for a tasty weeknight dinner or whenever you want a dish that will impress!

Low Carb Creamy Chipotle Shrimp

1 lb extra large shrimp (peeled and de-veined)

Olive oil

1/2 tsp garlic salt

1/2 tsp paprika

2 tbsp avocado oil

1/4 cup diced purple onion

1/4 cup diced bell pepper

2 cloves garlic minced

1/4 cup tomato sauce

2 Chipotle peppers in adobo sauce plus extra spoonful of adobo sauce

3/4 cup chicken stock

1/4 cup heavy cream

2 tbsp grated Parmesan cheese

Season shrimp with olive oil, garlic salt, and paprika.

In a blender, combine the tomato sauce and chipotle peppers until smooth.

In a large pan over medium high heat add the avocado oil and sauté the shrimp for about 2-3 minutes per side and remove from the pan.

In the same pan, lower the heat to medium and sauté the bell peppers and onions for about 2 minutes. Then add the minced garlic and sauté for another minute.

Add the blended chipotle puree to the pan and cook for 1 minute.

Add the chicken stock and let it simmer until it reduces a little.

Add in the heavy cream and stir until the sauce slightly thickens.

Add the grated Parmesan cheese and stir.

Gently add the cooked shrimp to the sauce and toss to evenly coat.

Garnish with chopped parsley and enjoy!
