Chocolate Chip Pancakes

Sharing this fluffy chocolate chip pancake recipe! These are an easy and fun breakfast or brunch that can be thrown together quickly. Because of my food allergies to milk, egg, and peanuts/tree nuts, I make a lot of vegan and nut-free recipes. However, you can tailor these to your own needs and preferences. Enjoy!

Servings: 2-4

Ingredients:

-1 1/2 cups (180g) flour

-1 1/2 cups milk

-1/2 cup chocolate chips

-2 tbs white sugar

-1 tbs apple cider vinegar

-1 tbs baking powder

-2 tsp vanilla

-1/2 tsp salt

-maple syrup

-powdered sugar

-butter or oil for cooking

-any other optional toppings (fruit, nuts, etc.)

Instructions:

-add apple cider vinegar to milk and set aside for 5 minutes to form a buttermilk

-meanwhile, add dry ingredients (flour, sugar, baking powder, salt) into large bowl and mix well

-add vanilla and slowly pour in buttermilk until batter is smooth; set aside for 5 minutes then transfer into measuring cup to make pouring easier

-heat up a nonstick pan or griddle on medium-low and add 1 tbs of butter or neutral oil

-pour ~1/3 cup of batter and space each pancake 1” apart

-cook until the edges turn light brown and bubbles form on the top, about 2-3 minutes

-add chocolate chips and flip over; cook for about 1-2 minutes and transfer pancake onto a baking sheet with a rack

-if you plan on cooking a large batch, preheat the oven to ~150 and keep the pancakes warm in there

-add butter or oil as needed and cook the remaining batches; prepare optional toppings

-plate the pancakes, top with butter, maple syrup, powdered sugar, and any other optional toppings

-enjoy!
