-1 1/2 lbs lean ground beef
-2 cups mixed frozen vegetables
-1 cup greek yogurt or mayo
-4 medium sweet potatoes, small-diced
-1 tbs sesame oil
-1 tbs honey
-1 tbs sriracha
-1/4 cup low-sodium soy sauce
-juice of half a lime
-salt and pepper
-olive oil for cooking

-add the sweet potatoes to a bowl with 1 tbs olive oil and 1/4 tsp each of salt and pepper; mix well and roast at 375F for 30 min
-heat a pan on medium-high, add 1 tbs olive oil, and sear the beef; break it apart and cook until no longer pink
-add in the mixed veggies and cook for 1 minute
-mix in the sesame oil, honey, and soy sauce; cook for 1 minute
-mix together the greek yogurt or mayo, sriracha, and lime juice
-build the bowls and store the meals in the fridge for up to 5 days or freezer for up to 6 months
