Chicken Zucchini Bake 🥒🍗

Deliciously cheesy chicken and zucchini casserole that's perfect for a comforting weeknight dinner, combining tender chicken, fresh zucchini, and a blend of creamy cheeses.

Ingredients:

2 cups cooked chicken, shredded

3 medium zucchinis, sliced

1 cup of cherry tomatoes, halved

1 cup shredded mozzarella cheese (see note)

1/2 cup grated Parmesan cheese

1/2 cup cream cheese, softened

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper to taste

1 tablespoon olive oil

Fresh basil for garnish (optional)

Directions:

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with cooking spray or a little olive oil.

Prepare the Vegetables: In a large bowl, combine the sliced zucchinis and halved cherry tomatoes. Drizzle with olive oil and season with salt, pepper, and Italian seasoning. Toss to coat evenly.

Mix the Chicken and Cheese: In another bowl, mix the shredded chicken, cream cheese, garlic powder, mozzarella cheese, and Parmesan cheese until well combined.

Assemble the Bake: Spread half of the zucchini and tomato mixture in the bottom of the prepared baking dish. Layer the chicken and cheese mixture on top, then finish with the remaining zucchini and tomatoes.

Bake the Casserole: Cover the dish with aluminum foil and bake for 25-30 minutes. Remove the foil and bake for an additional 10-15 minute's, or until the top is golden and bubbly.

Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh basil if desired. Serve warm and enjoy this deliciously cheesy chicken and zucchini bake!
