Vegan Cheesy Rice
Serves 8
You will need the following ingredients:
- 4 cups (840 g) rice
- 2 cups (260 g) cashews
- 1 large carrot
- 1/2 onion
- Water
- 3 cups (750 ml) plant-based milk
- 1 cup (83 g) nutritional yeast
- 1 tbsp paprika
- Black pepper
- 3 tbsp oil
- 2 tbsp lemon juice
- 2 tbsp wild mushroom mustard
- 2 1/2 tsp Kanel's Organic Red Fleur de Sel
- 1/2 tsp garlic powder
Steps:
- Prepare the rice according to the package instructions.
- In a pot, combine the cashews, carrot, and onion, then cover with water.
- Boil for 15 minutes, then drain.
- In a bowl, combine all ingredients except the rice, then purée with a blender.
- Add the rice and mix well.
