Chicken & Cheesy Pepper Rice 🧀🌶️🍗

This one is EASY, cheesy, and so good it won’t last long 😩🔥

🛒 Ingredients

2 cups cooked white rice (jasmine hits different 👀)

2 chicken breasts (cut into bite-sized pieces)

1 tbsp olive oil

1 tbsp butter

1 cup diced bell peppers (mix them colors 🌈)

2 cloves garlic (minced)

1/2 small onion (diced)

1/2 cup chicken broth

1 tsp paprika

1/2 tsp black pepper

1/2 tsp salt

1/2–1 tsp crushed red pepper flakes (optional but worth it 🌶️)

1 cup shredded cheese (cheddar or Mexican blend 🧀)

👩‍🍳 How to make it

Start by cooking your chicken in olive oil over medium heat

Season with salt, pepper, and paprika

Cook until golden and fully done (about 6–8 mins), then set aside

In the same pan, melt butter

Throw in onions, garlic, and bell peppers

Cook until soft and a little caramelized (4–5 mins)

Add your cooked rice right into the pan

Pour in chicken broth and mix it all together

Add red pepper flakes if you like a little heat 🔥

Put the chicken back in

Mix everything up real good

Top with cheese and stir until it’s melted, creamy, and perfect 😍
