Ice Cream Cookie Cups
🔥 Preheat oven to 350 degrees
Get your muffin tin. I used a jumbo muffing tin but a small cupcake pan will work to, just use less cookie dough. Spray your muffin tin and press 3-4 pieces of cookie dough together and place in muffin tin.
Press down cookies till flat. Bake at 350 for 13-15 minutes or until edges are golden brown. As soon as they come out of the oven use a cup or measuring cup to gently press down centers. This creates the signature cookie cup shape. Don't wait to long or or it will be harder to shape.
Top with ice cream and your favorite toppings and Munch!
Making ice cream cookie cups is one of my favorite easy desserts to prepare, especially during warm weather or for parties. One tip I’ve found helpful is to make sure the cookie dough pieces are pressed together firmly before baking to avoid cracks when shaping the cups. I usually use a jumbo muffin tin because it creates generously sized cups that hold plenty of ice cream, but smaller cupcake pans work well if you prefer smaller portions. Just adjust the amount of cookie dough accordingly. Timing is key when pressing down the centers of the cookies after baking. I recommend taking the cookies out as soon as you see golden brown edges, then gently pressing the middle with a measuring cup or glass while they are still warm and pliable. If you wait too long, the cookies harden and become difficult to mold. For toppings, don't be afraid to get creative! Classic chocolate chip cookies paired with vanilla ice cream and a drizzle of caramel or hot fudge are always a hit. You can also add nuts, sprinkles, fresh fruit, or even crushed candies for extra flavor and texture. This dessert is not only delicious but fun to make with kids or friends. Plus, it’s a great way to elevate regular cookies and ice cream into an impressive treat without complicated steps or ingredients. Enjoy making and customizing your ice cream cookie cups for any occasion!
