——Cake Ingredients——

2 large oranges (cut into big chunks)

1 cup vegetable oil

2 cups granulated sugar

4 eggs

1 tablespoon vanilla extract

2 cups all purpose flour

1 cup grated pistachios

1 tablespoon baking powder

1/4 teaspoon salt

Avocado oil spray for the pan

——Orange Cream Cheese Frosting——

8oz cream cheese room temperature

4 tablespoons unsalted butter softened

2 tablespoons fresh orange juice

2 teaspoons orange zest

1/2 cup heavy whipping cream

6 cups powdered sugar

——Garnish——

Orange zest

Grated pistachios

1. Preheat your oven to 350°F. Prep two 9” round cake pans by spraying with cooking spray and lining the bottom with parchment paper.

2. Wash the orange and blot dry with paper towels. Cut into chunks remove seeds if any.

3. Combine orange pieces, oil, sugar, eggs and vanilla extract in a blender. Cover and blend until smooth. Add flour, grated pistachios, baking powder and salt. Cover and blend just until combined and batter is smooth.

4. Divide the batter evenly into the prepared pans. Tap the pans on the counter to release any air bubbles.

5. Bake until a toothpick inserted into the center comes out clean, about 30 minutes.

6. Cool in the pan for 10 minutes. Remove from pan and cool completely.

7. For the frosting, place cream cheese and butter into a mixing bowl and mix on a medium-low speed until smooth.

8. Add in orange zest and juice and mix until combined. Next pour in the heavy cream and mix, Scrape the bowl with a rubber spatula as needed throughout this process. Mix until combined and smooth.

9. Add in the powdered sugar mix on low at first to avoid powdered sugar explosions. Increase the speed to medium-high once the powdered sugar is incorporated, and mix for about 1-2 minutes until stiff peaks form.

10. Assemble the cake, Place a dollop of frosting on your cake plate or stand and place the bottom layer of cake on top of that.

11. Add a generous amount of the frosting on top of the cake and spread evenly with a spatula. Place the next layer on top. Add the remaining frosting on top and spread evenly. Garnish or decorate the cake with orange zest, grated pistachios and orange slices and enjoy!
