—Ingredients—
1 and 1/4 cup granulated sugar
Zest of one large lemon (2 Tbsp)
2 eggs
1/2 cup unsalted butter (1 stick room temperature)
1 teaspoon vanilla extract
1/4 cup lemon juice
3 cups flour
2 teaspoons baking powder
1/8 teaspoon salt
5-6 drops food coloring (optional)
1 cup powdered sugar
1. Preheat the oven to 350°F.
2. In a large bowl rub together the sugar and lemon zest in between your fingers until fragrant.
3. Add in the eggs and soften butter, put on some cloves and mix with your hand until just combined. Next add in the vanilla extract, lemon juice and mix again.
4. Lastly add in the flour, baking powder and salt. Mix again until a dough forms. Lastly you can add in the food coloring (the food coloring is optional, you can definitely leave it out).
5. Line two baking sheets with parchment paper. Fill a bowl with powdered sugar.
6. Roll the dough into 1-inch balls and roll it in the powdered sugar, coating completely. Place the balls on the baking sheet 2 inches apart. Bake for 11 to 12 minutes. Let cool completely before serving and enjoy!
