ENJOY! Super easy grab and go breakfast at our house I take one tray and put them in the fridge for the week and freeze the rest for another time! Works great and saves myself some time another day.
... Read moreI absolutely adore these McGriddle Bites, and I have to share why they've become an absolute staple in our household! My mornings used to be a total scramble, trying to get everyone fed something wholesome before rushing out the door. That's where these amazing breakfast muffins came into play.
First off, let's talk about the 'healthy' aspect, which is something many of us are searching for. While the original McGriddle is a delicious treat, making them at home gives you so much control over the ingredients. Using sugar-free maple syrup is a brilliant swap that drastically cuts down on added sugars without sacrificing that signature sweet and savory flavor combo. And opting for turkey sausage instead of traditional pork sausage is a fantastic way to lean up the protein content, making these bites a more wholesome start to your day. You could even go a step further and use a whole wheat pancake mix to boost the fiber content, keeping you fuller for longer! For me, knowing exactly what goes into my family's breakfast provides such peace of mind.
The practicality of these easy grab and go McGriddle Bites is truly what sets them apart. Making a batch of 24 muffins might seem like a lot, but trust me, they disappear fast! What I love to do is bake them all, let them cool completely, and then divide them up. One tray goes straight into the fridge for quick breakfasts throughout the week – they reheat beautifully in just a few seconds in the microwave. The rest? Those go into freezer-safe bags, ready to be pulled out whenever we need a last-minute breakfast or snack. It's a game-changer for meal prep and saves so much time on those hectic weekday mornings. Just pop one or two in the microwave, and you've got a warm, satisfying meal.
And if you have little ones, you know how crucial it is to find something 'toddler approved.' My kids absolutely devour these! The bite-sized format and the perfect balance of sweet and savory make them irresistible. They're also wonderfully fluffy and moist, which is a huge plus for tiny mouths. It's so much fun to get them involved in the kitchen too; they love helping with the mixing and spooning the batter into the muffin tins. It's a great way to make breakfast fun and ensure they're getting a good start to their day.
Beyond the basic recipe, these McGriddle Muffins are super versatile. Don't have turkey sausage? Regular pork sausage works just as well, or you could even try chicken sausage for a different flavor profile. For an extra nutritional boost, I sometimes finely chop some spinach or bell peppers and fold them into the sausage mixture – the kids barely notice! You can also experiment with different types of cheese, like a sharp white cheddar or even a little Monterey Jack. A little pinch of cinnamon in your pancake mix can also elevate that cozy breakfast vibe. For those looking for even mini McGriddle bites, simply use a mini muffin tin and adjust baking time accordingly. This recipe truly adapts to your family's preferences, making it a customizable and delicious breakfast solution for anyone seeking healthy McGriddle muffins or mcgriddle muffin bites that are both easy and satisfying!
I make these in a cake pan and just slice squares up lol
