Homemade brown gravy
HOMESTYLE BROWN GRAVY (ONION • BELL PEPPER • GARLIC)
Flavor profile
• Savory, rich, slightly sweet from browned onions
• Smooth, pourable, spoon-coating
• Built correctly from a dark roux + warm stock
Ingredients
• ¼ cup neutral oil (vegetable, avocado, or canola)
• 1 medium onion, finely diced
• ½ bell pepper, finely diced (green for classic, red for slightly sweet)
• 3 cloves garlic, minced
• ¼ cup all-purpose flour
• 2½–3 cups warm chicken stock (important: warm, not cold)
Seasoning (layered, not dumped)
• 1 tsp seasoned salt
• ½ tsp black pepper
• ½ tsp garlic powder
• ½ tsp onion powder
• ¼ tsp paprika
• Optional depth boosters (choose 1–2):
• ½ tsp soy sauce or Worcestershire
• Pinch thyme
• Pinch cayenne (very small)
Method (Follow in Order)
1. Heat the oil
• Medium heat
• Oil should shimmer but not smoke
2. Sauté the vegetables
Add:
• Onions → cook 3–4 minutes until translucent
• Bell peppers → cook 2 minutes
• Garlic → cook 30–45 seconds
🔥 Let them toast lightly—you want color, not burning.
This is where the gravy gets its backbone.
3. Season the oil & vegetables
Sprinkle in:
• Seasoned salt
• Black pepper
• Garlic powder
• Onion powder
• Paprika
Stir and cook 30 seconds to bloom the spices in the oil.
4. Build the roux (critical step)
• Sprinkle flour evenly over the vegetables
• Stir constantly until flour absorbs all oil
Cook 3–5 minutes, stirring nonstop, until:
• Color is medium to dark brown
• Smells nutty, not raw
⚠️ Do NOT rush this. Raw flour = pasty gravy.
5. Add warm stock slowly
• Reduce heat to medium-low
• Add stock ½ cup at a time
• Whisk or stir aggressively after each addition
The gravy will tighten first—keep stirring.
Once smooth, add more stock.
6. Simmer & finish
• Bring to gentle simmer
• Cook 5–8 minutes, stirring often
• Gravy will thicken and darken slightly
Taste and adjust:
• Salt
• Pepper
• Optional soy/Worcestershire if needed
Final Texture Check
• Coats the back of a spoon
• Flows slowly, not watery
• No lumps, glossy finish
If too thick → add warm stock
If too thin → simmer longer (do NOT add raw flour)
