The sky’s the limit… use whatever your favorites are!! Try different combinations throw something in that you would never think of adding to your eggs. You may just create your new favorite thing!!
Let’s talk egg bites! So easy to make!
All you need is a muffin tin or silicone!
I use 10 eggs
1/2 tea.Salt and 1/2 teas. pepper
Wish them up well!!!
(If your a Starbucks egg bite fan— add 1/2 cup of cottage cheese and blend... it will give you more of the Starbucks consistancy) plus added protein! WIN WIN!
Spray your muffin tins well!
Fill up your muffin tins
Now add whatever you like!
1. I love chopped up ham , red peppers,
Onion and cheddar cheese
2. Spinach and cheese
3. Chopped up jalapeño poppers(this is one of my favorites!)
4. Bacon and cheese (hubby’s fav.)
5. Sausage and cheese
You can use whatever you LOVE! Just sprinkle a little on each muffin and bake at 350 for about 25 minutes... watch for your eggs to set...
Sometimes I line the muffin tin with a piece of deli ham... then fill with the egg mixture... or just an egg— bake just til it’s set— you all know I love the dippy part🤪💙🤪 “aka dippy eggs”
I can make these and store in fridge all week... they also freeze well...
To reheat: microwave for 30 seconds and they are delicious!

That's where homemade egg bites became my absolute breakfast meal prep hero! These aren't just delicious; they're incredibly versatile and a total game-changer for anyone looking to save time and eat healthier.
Why are egg bites so perfect for meal prep, you ask? Beyond the obvious convenience, they offer a fantastic way to control your ingredients, sneak in extra veggies, and ensure you're starting your day with a protein-packed meal. Forget those expensive store-bought versions; making them at home is super cost-effective and allows for endless customization. While the basic ham and cheddar is a classic, the real fun begins when you start experimenting with different combinations. I've tried everything from savory jalapeno popper for a kick, to spicy buffalo chicken for an adventurous morning. Don't forget the power of greens – spinach & cheese or broccoli & cheddar are fantastic choices. For something truly unique, I’ve also heard of mushroom, sun dried tomato & pepper, or even kimchi spinach egg bites, though I haven't ventured there yet!
To make your egg bite meal prep even more efficient, here are a few extra tips I've picked up:
Batch Cooking is Key: Dedicate an hour or so on a Sunday to make a large batch. This ensures you have breakfast ready for the entire week.
Ingredient Prep: Chop all your veggies (onions, peppers, spinach, etc.) and grate your cheese ahead of time. Having everything prepped makes the assembly process a breeze.
Silicone Molds are Your Friend: While the original recipe mentions muffin tins, I've found silicone muffin molds to be a lifesaver. They make for super easy release, meaning no sticking and less cleanup.
Cool Completely Before Storing: This is crucial for preventing condensation, which can make your egg bites watery. Let them cool fully on a wire rack before transferring to an airtight container.
Freezing for Longer Storage: If you want to make an even bigger batch, individual freezing is excellent. Once cooled, place them on a baking sheet in the freezer until solid, then transfer to a freezer-safe bag. This prevents them from sticking together and allows you to grab just one or two at a time.
To keep things exciting throughout the week, don't just microwave and eat! I love topping mine with a dollop of Greek yogurt for extra protein, a slice of avocado for healthy fats, or a dash of my favorite hot sauce. Sometimes, I'll even warm one up and serve it on a piece of whole-wheat toast with a little everything bagel seasoning for a more substantial meal. These aren't just easy, they're packed with protein, helping me stay full and energized until lunch. You can easily sneak in extra veggies, making them a balanced start to the day. Trust me, once you get into the rhythm of making these delicious, customizable egg bites, your mornings will be so much smoother. It’s a game-changer for anyone looking to simplify their breakfast routine without sacrificing taste or nutrition!
