Protein Egg Bites 🫑🍳🍄‍🟫

I HATE cottage cheese and was SCARED to even try it but now I can incorporate it into a lot of recipes and NEVER taste a thing!

6 eggs

Small container cottage cheese

Roasted red peppers

Spinach

Mushrooms

I’m a cheese girl and found I don’t need shredded cheese AT ALL!

I did not blend the cottage cheese and it still came out just fine.

Mix eggs and cottage cheese.

Cut up veggies

Place veggies in cupcake tin

Pour egg mixture over veggies- slightly covering the vegs

Bake at 350° for at least 20 minutes… I think mine took about 25mins.

These will rise and then fall while cooling. Once completely cool, place in freezer bags and freeze for up to a week.

You can microwave for 2 minutes in a paper towel straight from the freezer or thaw and microwave for 30sec -1min.
