Tiramisu Cupcakes, A taste of Italy in every bite! 😋☕

These coffee-soaked cupcakes, filled with creamy mascarpone and topped with a dusting of cocoa, are an irresistible twist on the classic dessert. Perfect for sharing with friends or indulging on your own. Who’s ready for dessert?!

Ingredients:

For the Cupcakes:

1 ¼ cups all-purpose flour

1 tsp baking powder

¼ tsp baking soda

¼ tsp salt

½ cup unsalted butter, room temperature

1 cup granulated sugar

2 large eggs

1 tsp vanilla extract

⅓ cup milk

⅓ cup brewed espresso (or strong coffee)

For the Filling:

8 oz mascarpone cheese

½ cup powdered sugar

½ cup heavy cream

1 tsp vanilla extract

For the Coffee Soak:

½ cup brewed espresso or strong coffee

2 tbsp sugar

2 tbsp coffee liqueur (optional)

For Topping:

Cocoa powder (for dusting)

Shaved chocolate or chocolate chips (optional)

Instructions:

Prepare the Cupcakes: Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.

Cream Butter and Sugar: In a large bowl, beat butter and sugar together until light and fluffy. Add eggs one at a time, beating after each addition. Mix in vanilla.

Alternate Dry Ingredients and Milk: Add half the dry ingredients to the butter mixture, followed by the milk. Mix well, then add the rest of the dry ingredients and mix until just combined.

Bake: Divide batter evenly between cupcake liners. Bake for 18-20 minutes or until a toothpick comes out clean. Let cupcakes cool completely.

Prepare the Filling: Beat mascarpone cheese, powdered sugar, heavy cream, and vanilla extract together until light and fluffy. Chill until ready to use.

Make Coffee Soak: Combine espresso, sugar, and coffee liqueur (if using). Stir until sugar dissolves.

Assemble the Cupcakes: Once cupcakes are cooled, use a small knife to cut a hole in the center of each cupcake. Brush the tops and insides of the cupcakes with the coffee soak.

Fill the Cupcakes: Spoon or pipe the mascarpone filling into the center of each cupcake.

Top and Finish: Dust each cupcake with cocoa powder, and add some shaved chocolate for an extra touch of indulgence.
