First harvest of the summer. 🍅🥬 I’ve been obsessed with kale salads ever since I discovered how delicious they are. This is the first time I used the one I’ve been growing on my balcony for a salad and it turned out amazing! 🌿✨

What I used:
🥬 Kale
🍅 Cherry tomatoes
🧅 Red onion
🌱 Green onions
🍋 Lemon
🧂 Salt
🫒 Olive oil
🥄 Mayo
🍊 Tangerine (or strawberries)
Preparation:
Wash everything well. Marinate the red onion in lemon. Chop it all up, mix the ingredients, adjust to your taste… and enjoy. 💚

It’s truly amazing how a simple ingredient like kale can transform so many dishes, especially when it’s fresh from your own garden! After enjoying my recent balcony garden harvest in a delicious salad, I realized how much I love experimenting with this versatile green. If you’re like me and always looking for different ways to make kale, let me share some of my favorite ideas and tips to get the most out of your glorious greens, whether they’re from your own backyard or the local market. Beyond the classic fresh salad, one of my go-to methods is making crispy kale chips. They are incredibly easy and make a fantastic healthy snack. Just tear your kale into bite-sized pieces, toss with a tiny bit of olive oil and a pinch of salt (maybe some nutritional yeast for a cheesy flavor!), and bake at around 300°F (150°C) for 10-15 minutes until crisp. They disappear so fast in my house! Another fantastic way to enjoy kale, especially if you find it a bit too bitter or tough raw, is to sauté it with garlic. This is my quick weeknight side dish. A little olive oil, minced garlic, and a big bunch of kale wilted down. A splash of lemon juice or apple cider vinegar at the end brightens it up beautifully. Sometimes I add chili flakes for a kick! It’s such a simple yet flavorful way to get those greens in. And speaking of salads, while my simple dressing is a winner, there are so many different ways to make kale salad exciting! I love adding roasted sweet potatoes and pecans for a heartier autumn-inspired salad, or sliced apples and a maple-Dijon vinaigrette for a refreshing crunch. For a creamier option, a homemade tahini dressing works wonders. Remember the golden rule for raw kale: always massage it! A quick massage with a bit of olive oil and lemon juice makes it tender and less bitter, truly transforming the texture from something tough to wonderfully palatable. This little trick is a game-changer when you want to bring your kale from my balcony to table in its freshest form. Don't forget about adding kale to soups and stews! It holds up incredibly well and adds a nutritional punch without falling apart. Just toss it in during the last 10-15 minutes of cooking. Lentil soup with kale or a hearty white bean and sausage stew with kale are some of my favorite comfort meals. Harvesting your own summer harvest kale is incredibly rewarding.
