We make these breakfast burritos with and without potatoes, either way works.

You just need chorizo/ a tube of chorizo which you can find at most grocery stores or markets, and eggs, tortillas, and cheese.

First off, let's talk about getting that amazing crispy, golden-brown tortilla. After rolling up your burrito, don't just eat it cold! The secret is to heat it in the same pan you used for your fillings, or a clean skillet, over medium heat. Press down gently with a spatula and let it cook for about 2-3 minutes per side until it's beautifully browned and crisp. This step makes all the difference, transforming a soft wrap into a truly satisfying savory breakfast wrap experience. Now, for the fillings! While I adore the rich taste of seasoned chorizo mixed with diced potatoes, sometimes I like to switch things up. If you're not a fan of chorizo, or just want variety, a great alternative is egg sausage breakfast burrito style. Simply cook up your favorite breakfast sausage (pork, chicken, or even plant-based sausage works wonderfully), crumble it, and mix it with your fluffy egg filling. You can also add some sautéed bell peppers and onions for extra veggies and flavor. For cheese, I usually stick with shredded cheddar or a Mexican blend, but Monterey Jack or even a spicy pepper jack can add a fantastic kick, especially if you love a bit of heat in your breakfast burrito cut open to reveal all those delicious layers. Speaking of layers, let's not forget the crucial addition that many of you search for: salsa! A chunky, fresh salsa really brightens up the rich flavors of the chorizo, egg, and potato.
