Chicken Fajitas
Ingredients
½ c. plus 1 Tbsp. extra virgin olive oil
¼ c. lime juice
Chilly pepper powder
2 tsp. cumin
½ tsp. crushed red pepper flakes
2 Tosp. fresh cilantro, chopped
1lb. boneless, skinless chicken breasts
Salt to taste
Garlic powder
4 red, yellow, and green bell peppers, seeded and sliced
1 red onion, sliced Tortillas, for serving Sour cream, for topping (optional)
Directions
1. In a large bowl, mix together ½ cup oil, lime juice, cumin, red pepper flakes, and fresh cilantro. Season chicken with salt and pepper, then add to bowl and toss to coat. Place all in a ziplock bag and refrigerate for at least 30 minutes (can marinate overnight if you wish).
2. Heat the remaining tablespoon of olive oil in a large skillet over medium heat.
Add chicken and cook until golden, 8-10 minutes per side. Let rest to cool then slice into strips.
3. Add bell peppers and onion to skillet and cook until soft, 5 minutes. Add chicken.
