From my own experience experimenting with Epis, I found it crucial to use fresh ingredients to get the most vibrant and dynamic flavor. In addition to the usual herbs and peppers, sometimes adding a splash of lime juice and a touch of oil can help meld the flavors and preserve the sauce. Fresh Epis can be refrigerated and used within a week, or frozen for longer storage without losing its potency. What I appreciate about Epis is how it can be a base for so many dishes — from marinating meats like jerk chicken to flavoring stews, rice, and beans. It brings depth and a slight kick of heat that complements traditional Caribbean dishes beautifully. For those new to Caribbean cooking, starting with Epis is a great introduction to authentic flavors, and making it at home is surprisingly simple, affordable, and rewarding. If you're interested in trying Epis yourself, start with simple proportions: a bunch of scallions, a few cloves of garlic, Scotch Bonnet peppers or any hot pepper you like, fresh thyme, a handful of parsley, salt, and black pepper, all finely chopped or blended together.
