“Marry Me” Crawfish and Salmon Lasagna Rolls

Crawfish and Salmon Lasagna Rolls
Yummy Ingredients:
• 8 lasagna noodles
• 1 lb fresh salmon fillet
• 1/2 lb crawfish tails
• 2 cups ricotta cheese
• 1 cup shredded mozzarella cheese
• 1/2 cup grated Parmesan cheese
• 2 cups fresh spinach, chopped
• 2 cloves garlic, minced
• 2 cups Alfredo sauce
• 2 tbsp olive oil
• Salt and pepper, to taste
Instructions:
1. Prepare the Noodles: Cook the lasagna noodles according to package instructions. Drain and lay them flat on a baking sheet to prevent sticking.
2. Cook the Salmon: Season the salmon fillet with salt and pepper. In a skillet over medium heat, add olive oil and cook the salmon until it flakes easily with a fork. Remove from heat, let it cool slightly, then flake into pieces.
3. Sauté the Spinach: In the same skillet, add minced garlic and sauté until fragrant. Add chopped spinach and cook until wilted. Remove from heat.
4. Prepare the Filling: In a mixing bowl, combine ricotta cheese, flaked salmon, crawfish tails, sautéed spinach, and half of the Parmesan cheese. Mix well and season with salt and pepper.
5. Assemble the Rolls: Lay a lasagna noodle flat and spread a layer of the seafood and cheese mixture evenly over it. Roll the noodle tightly from one end to the other. Repeat with remaining noodles and filling.
6. Prepare the Baking Dish: Preheat the oven to 350°F (175°C). Spread a thin layer of Alfredo sauce on the bottom of a baking dish. Place the lasagna rolls seam-side down in the dish
7. Add Sauce and Cheese: Pour the remaining Alfredo sauce over the lasagna rolls. Sprinkle shredded mozzarella and the remaining Parmesan cheese on top.
8. Bake: Cover the dish with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is golden and bubbly.
9. Serve: Let the lasagna rolls rest for a few minutes about 5 min before serving.
