Whipped Honey Garlic Butter

INGREDIENTS

* 85 g (6 tbsp) softened unsalted butter

* 1–3 tsp garlic confit oil (start with 1 tsp, add more to taste)

* 1–2 tsp honey or chili honey

* 1-2 tsp hot pepper sauce

* Tiny pinch of salt

* Optional:

* splash of lemon juice (⅛ tsp — brightens without tasting lemony)

* pinch of smoked paprika

SUPER AIRY WHIPPED BUTTER

1. Start with very soft butter

2. Whip with a mixer

Using a hand mixer or stand mixer, whip on medium-high for 2–3 minutes until pale and fluffy.

3. Slowly drizzle in garlic confit oil

Drizzle it in while whipping so it emulsifies like mayonnaise.

4. Add honey

Add the honey in a slow drizzle too so it doesn’t collapse the butter’s structure.

5. Season lightly

Add:

* pinch of salt

* optional splash of lemon juice

* optional sweet chili flakes or a dash of your chili honey

Whip 30 seconds more.

6. Serve or Chill briefly

Put in the fridge for 10–15 minutes to help it firm up just slightly, then serve.
