For the Pistachio-Crusted Rack of Lamb:

- Dijon mustard for coating

- Pistachio dust, mixed with breadcrumbs and a little rosemary and parmesan cheese (use a food processor)

For the Sautéed Spinach:

- Fresh spinach (about 1 pound)

- Garlic, minced

- Olive oil

- Salt and pepper to taste

For the Creamy Mashed Potatoes:

- Potatoes (Yukon Gold or Russet, about 2 pounds)

- Butter

- Cream or milk

- Salt and pepper to taste

For the Red Wine Reduction:

- Red wine (about 1 cup)

- Beef or vegetable broth (about 1/2 cup)

- Shallot, finely chopped

- Butter(to finish)

- Salt and pepper to taste
