Homemade Chickpea Peanut Butter Cups
These look like normal peanut butter cups.
They are not.
The creamy center is made from sweetened Chickpeas and somehow tastes like peanut butter cheesecake frosting.
Most people won’t believe it until after they eat one.

Chocolate Shell
* 2 cups melted dark or milk chocolate
* 1 tbsp coconut oil
* flaky sea salt
Sweetened Chickpea Filling
* 1 can Goode Foods chickpeas drained and rinsed extremely well
* 1/2 cup peanut butter
* 1/3 cup maple syrup
* 1/4 cup powdered sugar
* 2 tbsp brown sugar
* 1 tsp vanilla extract
* pinch of salt
* 2 tbsp oat flour or graham cracker crumbs
* optional mini chocolate chips

The Secret
Peel off as many chickpea skins as possible before blending.
Then blend the mixture MUCH longer than you think you need to.
That’s what transforms it from “beans” into a silky whipped dessert filling.

Instructions
1. Melt chocolate and coconut oil together until glossy and smooth.
2. Add a thin layer of chocolate into cupcake liners or silicone molds.
3. Freeze for 5 minutes until slightly hardened.
4. Blend chickpeas, peanut butter, maple syrup, sugars, vanilla, salt, and oat flour until completely smooth and creamy.
5. Scoop the filling into each chocolate cup.
6. Add optional chocolate chips, crushed pretzels, or caramel in the center.
7. Cover the tops with more melted chocolate.
8. Sprinkle flaky sea salt on top.
9. Refrigerate or freeze until firm.

The filling becomes thick like a truffle or peanut butter mousse.
