‏📋 Ingredients (Makes 6 bombs):

‏· 6 large burrito-size flour tortillas

‏· 6 large eggs, scrambled

‏· 1 cup cooked crispy bacon or sausage, crumbled

‏· 1 cup shredded cheddar cheese

‏· 1 cup frozen tater tots or hash browns, cooked & crispy

‏· ½ cup diced bell peppers (sautéed)

‏· 1 cup refried beans (optional)

‏· For Frying: 1 liter vegetable oil

‏· For Breading: 1 cup flour, 2 eggs (beaten), 2 cups panko breadcrumbs

‏· To Serve: Sour cream, salsa, sliced avocado

‏👨🍳 Instructions:

‏1. Fill: Lay tortilla flat. Layer in center: refried beans, scrambled eggs, bacon, cheese, potatoes, peppers.

‏2. Fold: Fold sides inward, then roll tightly into a cylinder. Secure with toothpicks.

‏3. Bread: Dredge each burrito in flour, dip in beaten egg, then coat thoroughly in panko crumbs.

‏4. Fry: Heat oil to 350°F (175°C). Fry burritos for 3-4 minutes until deep golden brown and crispy. Drain on wire rack.

‏5. Serve: Remove toothpicks, slice in half diagonally, and serve with dipping sauces.
