Ratatouille
My fiancé was in the mood for ratatouille and I was happy to oblige. I’ve done it before more fancy with all the veggies lined up but I like this more haphazard way! I think it was a little easier and also tastier since the veggies absorbed more of the sauce.

First I spelled and sliced an eggplant into thin rounds and soaked them in salt water for 30 minutes. Meanwhile I prepared the onion, zucchini, green pepper and garlic. After I removed the eggplant slices from the water I dredged them in flour and fried them for a few minutes on each side.

Next I cooked the onion and garlic till caramelizad and added the green peppers. I added 4 chopped tomatoes and covered it to let it break down for 5 minutes. I like things extra saucey so I added some tomato purée and let that simmer a little longer to incorporate. Last I added the chopped parsley.

I covered 3 small glass Tupperwares with the sauce mix and placed a layer of the eggplants and zucchini slices. I covered that with more of the sauce and baked it in the oven for 30 minutes.

As a side dish I think this is great but it is a bit light for a full meal. We ate it with some of the focaccia bread and it was really delicious!
