Vegan chocolate chip cookies
I just made these vegan chocolate chip cookies. I usually like to use coconut oil instead of butter but since I ran out I used sunflower oil which worked just as well.
I also used spelt flour for these which gave them a unique flavor.

First I mixed one cup of spelt flour with 1/2 tsp baking soda, 1/4 tsp salt, 1/4 cup of unrefined sugar and 1/4 cup brown sugar. Next I added 2 Tbsp oil and 2 tbsp soy milk. It looked a little dry so I added an extra tablespoon of both the oil and soy milk. I chopped and measured 1/3 cup of chocolate 🍫 and folded them in.
I let that chill in the freezer for a few minutes while the oven heated up to 350 degrees F.

I shaped the dough into balls and baked them for 11 minutes. The original recipe said if they don’t flatten to press down on them after they come out with a spoon which is what I did.
They came out really nice and not overly sweet.
