私も最近「麺や晴心」に初めて足を運びました。まず店内は小ぢんまりとしていて、カウンター席メインですが居心地が良い雰囲気です。注文したのは特製手揉み中華そば醤油とハラペーニョの限定和え玉。スープは昆布出汁のうまみと淡い酸味が混ざり合い、鴨に似た深い風味を感じましたが、一つの味に簡単に分解できない複雑さがあり、何度も味わいたくなる仕上がりでした。 麺は手揉みの太縮れ麺で、箸で持つだけでもその弾力が伝わってきて期待が膨らみます。一口すすった瞬間のもちもちぷるぷる感が印象的で、スープとのコラボレーションで更に美味しさが増しました。個人的にスープにたっぷり浸した後のもちもち感がたまらずおすすめです。 チャーシューは吊るし焼きの豚としっとりジューシーな鶏むね肉の２種類。特に吊るし焼きチャーシューは燻香が鼻に抜け、熟成感のある旨味が口いっぱいに広がります。麺が残り少なくなった頃でもチャーシューがしっかり味わえるのも嬉しいポイントです。 限定のハラペーニョ和え玉は細い麺に酸味と辛味のバランスが絶妙なハラペーニョペーストが絡み、歯切れよいザクザク食感も楽しめます。混ぜムラが出ないようにしっかり混ぜることでペーストの風味が全体に広がり、最後はスープに浸していただくとピリッとしたアクセントがスープの旨味を引き立て、一段階美味しさがアップしました。 また、薬味の葱や玉葱が後半に味の変化を付けてくれるので、飽きずにスープ完飲まで楽しめました。価格は特製ラーメン一杯でやや高めですが、その価値は十分に感じられます。 他では味わえない独特の味わいと食感が楽しめる麺や晴心は、ラーメン好きならぜひ一度訪れてほしいお店です。私もまた昆布水つけ麺を試しに近々再訪予定です。
