Ingredients
Filling:
• 16 oz (2 packages) cream cheese, softened
• ½ cup sugar
• 1 tsp vanilla extract
• 2 large eggs
Crusts:
• 12 mini graham cracker crusts
Strawberry Glaze:
• 2 cups fresh strawberries, chopped/divided
• ¼ cup sugar
• 1 tbsp cornstarch
• 2 tbsp water
Instructions
1 Preheat oven to 325°F (163°C).
2 Make filling: Beat cream cheese until smooth. Add sugar and vanilla; mix well. Beat in eggs one at a time on low speed just until combined.
3 Assemble: Place mini crusts on a rimmed cookie sheet. Fill each with batter. Set the sheet in a larger pan and add hot water until it reaches 1 inch up the sides.
4 Bake 15–20 minutes until centers are set but still slightly jiggly. Cool in the oven with door cracked for 10 minutes, then remove.
5 Make glaze while cooling: In a saucepan, combine 1 cup strawberries and sugar. Mash lightly. Whisk cornstarch with water and stir in. Simmer 3–5 minutes until thick and glossy. Stir in remaining strawberries. Cool to room temperature.
6 Finish: Spoon glaze over cooled cheesecakes. Refrigerate at least 2–3 hours (ideally 24 hours for best texture), though they can be eaten once fully cooled.
