While I adore grilled dishes, I’ve also poured a lot of love into perfecting some fried fish recipes that are just as irresistible, if not more so, on certain days! One of my absolute favorites, and what I truly want to share more about from my kitchen, is my Tandori Tilapia Fry. Now, I can hear some of you thinking, 'Tilapia? And fried?' If you're lucky enough to find fresh Surmai, a simple yet effective marinade can elevate it to culinary perfection. I'd typically recommend a blend of ginger-garlic paste, red chili powder, turmeric, a dash of cumin, and a generous squeeze of lime or lemon juice. Allow it to marinate for at least an hour, or even overnight for deeper flavor. The key to successful grilling, whether it's Surmai, a thick Tilapia fillet, or even another favorite like mackerel, is to ensure your grill is piping hot and well-oiled to prevent any sticking. Don't flip it too often – let it develop a beautiful char before turning. You want that gorgeous grill mark and smoky aroma without drying out the delicate flesh inside. It would offer a fantastic contrast in texture compared to frying, but the flavors would be equally vibrant and exciting.
