I used to think potato wedges were just one of those foods that look amazing online and then disappoint at home.

Turns out… you have to boil them first.

That one step completely changed the texture. Crispy outside, soft inside, actually seasoned all the way through.

I air fry at 400 for about 20 minutes, toss halfway, and don’t skip the oil + seasoning step. Garlic, onion, parmesan, paprika — simple but solid.

If your wedges never quite hit the way you want them to, this is probably the missing piece.
