Cowboy Caviar
Add this to your weekly rotation or meal prep! I add my avocado separately and it stays good in the fridge longer!
Make sure to eat it with the Hint of Lime Tostitos chips!

1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can black eyed peas, drained and rinsed
1/2 red onion diced
1 cup corn
1 avocado diced
2 roma tomatoes diced
1/4 cup cilantro chopped
1 jalapeño, seeded and finely chopped
1/4 cup olive oil
juice of one lime
1/2 teaspoon cumin
1/2 teaspoon chili powder salt and pepper to taste
