METHOD
◼ Boil ½ cup water. Kill the heat, drop in the tea bags, steep 7–8 min until deep and concentrated. Squeeze the bags out.
â—¼ Add vinegar, brown sugar, salt, peppercorns, coriander, garlic, bay leaf, red pepper flakes, and orange peel to the tea. Simmer gently until the sugar dissolves. Kill the heat.
â—¼ Pack the sliced onions tightly into a jar. Pour the hot brine over, fully submerging them. Press down if needed.
