* 1 tsp baking soda
* ½ tsp baking powder
* ½ tsp kosher salt
* 1 tsp cinnamon
* ¾ cup chopped walnuts (optional)
Strawberries
* 1 lb strawberries, diced
* Juice of 1 lemon
* 1½ tbsp sugar
* ½ tsp vanilla (optional)
* Pinch of salt
Glaze
* 1½ cups powdered sugar
* Reserved strawberry syrup
* 2–3 tbsp heavy cream
Directions
1. Brown the butter and let cool.
2. If bananas aren’t ripe, mash with 3 egg yolks and let sit 30 minutes (skip if bananas are spotty and ripe).
3. Whisk together butter, brown sugar, eggs, bananas, sour cream, and vanilla.
4. Fold in flour, baking soda, baking powder, salt, cinnamon, and walnuts.
5. Rest batter 30–60 minutes (or overnight for the best flavor).
6. Toss strawberries with lemon juice, sugar, vanilla, and salt. Let sit at least 20 minutes.
7. Bake in a greased loaf pan at 375°F for 10 minutes, then 350°F for 30–35 minutes.
8. Cool completely.
9. Strain strawberries, whisk the syrup into powdered sugar, then add heavy cream until pourable.
10. Pour glaze over cooled loaf and enjoy.
✨ Save the macerated strawberries for yogurt, pancakes, ice cream, or spoon them over a slice of the bread.
Making banana bread with a twist can elevate a simple recipe to something truly special. One tip I found particularly helpful is browning the butter carefully until it reaches a nutty aroma and a golden color without burning it, as this adds a rich, deep flavor to the bread that plain melted butter simply can't achieve. Additionally, letting the batter rest before baking, even overnight if time allows, can significantly improve the flavor, allowing all the spices and banana to meld beautifully. The strawberry component in this recipe is quite versatile. Tossing diced strawberries with lemon juice, sugar, vanilla, and a pinch of salt not only enhances their natural sweetness but also helps release juices to create a flavorful syrup when strained. This syrup is then mixed with powdered sugar and cream to make a smooth glaze, which adds a tangy sweetness that complements the richness of the brown butter banana bread perfectly. I also love how the leftover macerated strawberries can be saved and used in other ways, such as topping for yogurt, pancakes, or ice cream, which adds freshness and a bright contrast to those dishes. For those who enjoy nuts, adding chopped walnuts brings a pleasant crunch and earthy flavor that contrasts nicely with the softness of the banana bread. In summary, this recipe is not just about the end result but also about the little steps that build up to wonderful layers of flavor—from browning the butter to preparing the strawberry glaze. It’s a great way to mix seasonal strawberries with comforting banana bread, making it ideal for family breakfasts or as a sweet treat with afternoon tea.
