So I made another healthy Vietnamese inspired dish, this time completely meatless. Jasmine rice, sautéed veggies, and a fragrant homemade sauce came together beautifully.

Fresh veggies: basil, peppermint, bean sprouts, carrots, purple & white cabbage, cucumber, green onion

Cooked: jasmine rice, mushrooms, spinach

Sauce: avocado oil, garlic, red chili peppers, white onion, green onion, fish sauce, brown sugar, coconut water
