Roasted Veggies: Spaghetti squash
Spaghetti squash doesn't require much its a very simple yellow vegetable. Chop your squash into round pieces. This will require some elbow grease because spaghetti squashes are hard to cut. I heard of a trick that if you microwave it for like 30 seconds to a minute it'll make it easier to cut a bit. But after you chop, place on a baking sheet and lightly coat with vegetable oil, salt and pepper. Maybe some garlic and onion powder but honestly it doesn't need it, and I love using seasoning. Bake for 45 min @ 400° or until your able to easily shred the insides of the squash. I like to pair spaghetti squash with shrimp, it pairs well and tastes so fresh 😋. Enjoy!
