🍪 Crust
Ingredients:
* Biscoff cookies (1 per mini cheesecake or crushed for a base)
* 2–3 tbsp melted butter (if crushing into crumbs)
Instructions:
1. Place whole cookie in the bottom of each mini cheesecake pan
or
Mix crushed cookies with melted butter and press into bottoms
2. Set aside

Cookie Butter Cheesecake Filling
Ingredients:
* 16 oz cream cheese (softened)
* ½ cup sugar
* 2 eggs
* ½ cup Biscoff cookie butter
* 1 tsp vanilla
Instructions:
1. Preheat oven to 325°F
2. Beat cream cheese + sugar until smooth
3. Add eggs one at a time
4. Mix in cookie butter + vanilla
5. Pour into prepared mini pans
6. Bake 18–22 minutes (centers slightly set)
7. Cool, then chill completely

Ingredients:
* ½ cup Biscoff cookie butter (melted)
Instructions:
1. Warm cookie butter until pourable
2. Pour over chilled cheesecakes
3. Smooth gently if needed

1. Once cheesecakes are chilled, add melted cookie butter topping
2. Pipe whipped cream on top
