Lemon Blueberry Loaf

1. Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.

2. Whisk together 1 and 1/2 cups of all-purpose flour, 1 teaspoon of baking powder, and 1/2 teaspoon of salt in a bowl. Set aside.

3. In a separate bowl, combine 1 cup of granulated sugar with the zest of 2 lemons (about 2 tablespoons). Rub together with your fingers until fragrant.

4. Beat 3/4 cup of room temperature unsalted butter into the sugar-lemon mixture until light and creamy.

5. Add 3 large eggs one at a time, mixing well after each addition.

6. Stir in 1 teaspoon of vanilla extract and 2 tablespoons of lemon juice.

7. Alternately add the dry ingredients and 1/2 cup of milk to the butter mixture, starting and ending with the dry ingredients.

8. Toss 1 cup of blueberries with 1 tablespoon of all-purpose flour and gently fold them into the batter.

9. Pour the batter into the prepared pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

10. Allow the loaf to cool in the pan for about 15 minutes before removing it to cool completely on a wire rack.

For the Lemon Glaze:

1. Whisk together 1 cup of powdered sugar and 2-3 tablespoons of lemon juice until smooth.

2. Drizzle the glaze over the cooled loaf.
