Whole Oven Roasted Chicken

The Ingredients
The Base:
4 to 5 lb high quality whole chicken
Baby potatoes
Carrots
Celery sticks
Red onions
Whole garlic cloves
Fresh lemons
Olive oil
The Seasoned Butter Gold:
1 cup salted butter, softened
Coarse salt
Black pepper
Smoked paprika
Onion powder
Garlic powder
Seasoning salt

The Step By Step Directions
Step 1: Build the Veggie Bed
Preheat your oven to 425 degrees. Chop your baby potatoes, carrots, celery, and red onions into thick, rustic pieces. Toss them directly into your roasting pan along with plenty of whole garlic cloves. Drizzle everything generously with olive oil and a heavy pinch of salt. Mix it around with your hands to create a beautiful flavor foundation for your chicken to sit on.
Step 2: Mix the Seasoned Butter
In a small bowl, combine your cup of softened salted butter with your salt, pepper, smoked paprika, onion powder, garlic powder, and seasoning salt. Mash it together until it forms a smooth, deeply colored, highly seasoned paste.
Step 3: Prep and Stuff the Cavity
Pat your chicken completely dry with paper towels. Generously season the inside of the cavity with those same spices. Do not be shy here because this builds flavor from the inside out. Once it is well coated, stuff the cavity full with lemon halves and any extra celery, onion, and garlic you have left over.
Step 4: The Under Skin Butter Trick
Gently slide your fingers under the skin of the chicken breast, starting from the cavity opening. Work your way around slowly to separate the skin from the meat without tearing it. Take that beautiful seasoned butter and tuck it right into those pockets. Massage it from the outside so it covers the breasts evenly. Rub any remaining butter or oil over the outside of the skin so every single inch is covered.
Step 5: Into the Oven
Sit your prepared chicken right on top of that seasoned vegetable bed. Pop the pan into the oven at 425 degrees. Let it roast beautifully until the skin is deeply golden and crispy, and the internal temperature of the thickest part of the thigh reads 165 degrees. The veggies are going to caramelize beautifully in those rich chicken juices while it cooks.
Step 6: The Rest and Reward
When it comes out of the oven, do not you dare cut into it yet. Let the chicken rest on the counter for at least 15 minutes. This lets all those delicious juices lock into the meat instead of running out onto your cutting board.
