zucchini fritters (easy summer recipe) ☀️✨

With summer just around the corner, I’m sharing my favorite summer recipes! These delicious, crispy zucchini fritters are loaded with herbs and creamy goat cheese. The perfect appetizer or snack, can also use carrots and zucchini together. Make sure to give this one a try!

Summer Recipe # 1: Zucchini Fritters

- 2 large zucchinis

- 1/2 teaspoon salt

- 3 garlic cloves, minced

- 1/4 cup goat cheese

- 1/3 cup scallions, chopped

- 1/3 cup parsley, chopped

- 1/4 cup all purpose flour

- 1 large egg

- 1/4 teaspoon black pepper

- Salt to taste

Directions:

1. Wash the zucchini, do not peel the skin. Grate both with a box grater.

2. Place grated zucchini in a colander over the sink. Add salt and gently toss to combine; let it sit for 10 minutes.

3. Either using your hands or a cheese cloth, squeeze the water out.

4. In a large bowl, combine the zucchini, garlic, goat cheese, scallions, parsley, flour, egg, and black pepper. Season with salt to taste. Mix well.

5. Heat olive oil in a cast iron skillet over medium high heat. Using a scooper, I used a 1 1/2 tablespoon ice cream scoop, scoop the batter for each fritter.

6. Flatten each with the back of the scooper or spatula, cook for 4 to 5 minutes, flipping in between.

7. Serve immediately. I like to serve with a garlic lemon aioli on the side. Enjoy!
