I seasoned the squash with EVOO and S+P then I baked it at 400 for about an hour until it was fork tender. Removed all the flesh and put in a bowl. I added some ricotta, créma, sage and thyme and combined. I’m a large frying pan I added EVOO and cooked a chopped onion until translucent then added spicy sausage and cooked through. Once the sausage was cooked I added it to the squash mixture and combined. Add S+P to taste.
