I literally dream about those perfect little stemmed glass cups, filled with layers of creamy banana, rich banoffee, and topped with fluffy whipped cream, a delicate chocolate shard, and a sprig of fresh mint. It was served alongside a bowl of ice cream, but honestly, this cream dessert blew everything else out of the water.
When I got back home, I was on a mission. How could I recreate that heavenly experience? I started experimenting, aiming for that perfect balance of sweet, creamy, and utterly satisfying. While I don't have a Ninja Creami myself (yet!), I knew I wanted something with that incredible, smooth texture, almost like a no-churn ice cream. And I think I nailed it with this easy, no-bake version!
Here's my go-to recipe for a taste of that cruise dessert luxury right in your own kitchen:
Ingredients:
1 1/2 cups crushed digestive biscuits or graham crackers (for the base)
1/2 cup melted unsalted butter
3-4 ripe bananas, sliced
1 can (13.4 oz) dulce de leche or thick caramel sauce
2 cups heavy whipping cream
1/4 cup powdered sugar (optional, for whipped cream)
1 tsp vanilla extract (optional, for whipped cream)
Chocolate bar for shaving/shards
Fresh mint sprigs for garnish
Instructions:
Crust: Combine crushed biscuits and melted butter. Press firmly into the bottom of individual stemmed glass cups or a single pie dish. Chill in the fridge for at least 15 minutes.
Bananas: Arrange a layer of sliced bananas over the chilled crust.
Caramel Layer: Spoon a generous layer of dulce de leche over the bananas. You can gently warm it slightly to make it easier to spread if it's too thick.
Whipped Cream: In a cold bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
Assemble: Pipe or spoon a generous dollop of whipped cream over the caramel layer.
Chill & Garnish: Refrigerate for at least 2-4 hours, or ideally overnight, to allow the layers to set and flavors to meld. Before serving, top with fresh chocolate shards and a mint sprig, just like they did on the cruise!
Now, about that 'Ninja Creami Banoffee Ice Cream' craving! If you're lucky enough to have one, you can absolutely adapt this! You could blend the bananas with some heavy cream, a touch of dulce de leche, and freeze it in your Creami pint. Then, churn it according to your machine's instructions for a super creamy, fresh banoffee ice cream. You could even mix in some crumbled biscuit pieces during a 'mix-in' cycle!
