Lemon Ricotta Cookies
Lemon Ricotta Cookies-
2 1/2 c. flour
2 tsp. baking powder
1/2 tsp. baking soda
3/4 tsp. salt
1 stick salted butter
1 2/3 c. sugar
2 eggs
15 oz. whole milk ricotta cheese
2 tsp. vanilla
1/4 tsp. almond extract
1/4 tsp. lemon extract
1 Tbsp. fresh lemon zest
2 1/2 Tbsp. fresh lemon juice
Glaze-
1 1/2 c. powdered sugar
1/4 c. fresh lemon juice
1 tsp. clear vanilla
Whisk flour, baking powder, baking soda, and salt together in large bowl and set aside.
In stand mixer bowl, with whisk attachment, beat the butter and sugar together on high soeed speed for one minute. Add 1 Tbsp. lemon zest and continue beating for another minute. Scrape bowl as needed. Turn down mixer and add eggs one at a time, then add ricotta cheese, vanilla, lemon, almond extracts, and lemon juice. Beat until combined. Scrape sides and bottom of bowl as needed.
Slowly add flour mixture on low speed. Do not overmix.
Dough will be sticky and thick. Cover bowl and chill for 2-4 hours.
When dough is chilled, preheat oven to 350 degrees. Line a baking sheet with parchment paper. Remove cookie dough from refrigerator. Use 2 oz cookie dough scoop and scoop onto cookie sheet. Bake for 12-13 minutes. Remove from oven and let cookies rest on baking sheet for 5 minutes. Transfer to wire rack. Make the glaze. Whisk powdered sugar, lemon juice, and vanilla together till smooth.
Spoon over cooled cookies. Garnish with a tiny bit of lemon zest. Enjoy!
