Lemon Ricotta Pancakes 🥞 🍋

These pancakes are so sweet, no need for syrup!!

Made with a side of turkey sausage & scrambled eggs 🥰

Pancake Ingredients:

✨ 1 1/2 cups All Purpose Flour

✨ 4 tbl Sugar

✨ 2 tsp Baking Powder

✨ 1/4 tsp Baking Soda

✨ 1/4 tsp fine Sea Salt

✨ 1 cup Milk

✨ 3/4 cup Ricotta

✨ 3 Eggs

✨ 1 tsp Vanilla

✨ 1 tbl melted Butter

✨ 1/4 cup Lemon Juice

💥 In a large bowl mix together dry ingredients

💥 In a separate bowl mix all the wet ingredients

💥 Mix wet and dry ingredients together

💥 Ladle onto a hot griddle!! Cook on both sides!!

💥 Add toppings!!!

Berry Ingredients:

✨ 10 oz frozen Berries

✨ 3 tbl Lemon Juice

✨ Corn Starch Slurry ( 3tbl cornstarch mixed with 3tbl water )

💥 Cook berries until simmering, add lemon juice

💥 Pour in slurry, make more if you want it thicker, just add water if you want it thinner!!

Glaze Ingredients:

✨ 1 cup Powder Sugar

✨ 1 tbl Lemon Juice

✨ 2 tbl Milk

💥 Whisk ingredients until smooth!

While my original recipe is a sweet treat that's worth every bite, it's definitely possible to make some fantastic low-carb friendly ricotta pancakes too. If you're looking to cut down on carbs without sacrificing that amazing fluffy texture and tangy taste, let's dive into some smart swaps and tips! First up, the flour. My classic recipe uses all-purpose flour, but for a low-carb version, almond flour or coconut flour are your best friends. Almond flour tends to give a lighter, more delicate texture, while coconut flour is very absorbent, so you'll need less of it and possibly more liquid. A good starting point is usually a mix, or adjusting your liquids carefully if using just one. These flours are naturally much lower in carbohydrates, making them perfect for a keto or low-carb lifestyle. Next, let's talk sweetness. My recipe uses sugar, including "PURE CANE DIXIE CRYSTALS" for that perfect sweetness. But for low-carb, you'll want to switch to erythritol, stevia, monk fruit, or a blend. These natural sweeteners provide sweetness without the carbs or the glycemic impact. Remember to adjust the amount according to your preferred sweetness level, as their potency can vary compared to regular sugar. Ricotta cheese is already a great low-carb base for these pancakes, offering protein and healthy fats. You can stick with regular whole milk ricotta for that creamy richness. Eggs are also naturally low-carb and crucial for binding, especially with gluten-free flours. For liquids, instead of regular milk, unsweetened almond milk or coconut milk are excellent low-carb alternatives. Don't forget your leavening agents! Baking powder and baking soda (like the 'Baking Soda' mentioned in the OCR) are still essential for getting that wonderful rise and fluffiness. They work just as well in low-carb recipes. A pinch of 'fine Sea Salt' can also help balance the flavors, just as in the original. When it comes to toppings, this is where you can get really creative while staying low-carb. Instead of my traditional berry sauce (which uses cornstarch and natural fruit sugars), opt for fresh berries in moderation – raspberries and blueberries are good choices. Just ensure your low-carb flours are well combined, and be mindful that the batter might be a bit thicker or thinner depending on the flour you choose.
