HOW TO COOK NECKBONES

2024/4/25 Edited to

... Read moreHey foodies! If you're looking for that ultimate comfort food experience, you absolutely have to try cooking neck bones. They're economical, incredibly flavorful, and when done right, they just melt in your mouth. Let me share how I cook neckbones to perfection, whether you prefer the stove or a slow cooker. First things first: Preparation is Key No matter which method you choose, always start by thoroughly cleaning your neck bones. I rinse them several times under cold running water to remove any bone fragments or impurities. Some people like to soak them in a little vinegar water for about 30 minutes, then rinse again, which can help draw out any remaining blood and reduce gamey flavors. Pat them dry with paper towels – this helps with browning later! Method 1: How to Cook Neck Bones on the Stove (My Go-To for Rich Flavor) This method is fantastic for developing a deep, savory broth. Here’s my simple approach: Ingredients: 2-3 lbs pork neck bones (smoked or fresh) 1 large onion, chopped 2-3 celery stalks, chopped 1-2 bell peppers (any color), chopped 4-6 cloves garlic, minced 1-2 bay leaves 1 tsp dried thyme 1 tsp smoked paprika (optional, but adds depth) Salt and freshly ground black pepper to taste 6-8 cups chicken or vegetable broth (or water) 1-2 tbsp olive oil Instructions: Sear the Neck Bones: In a large, heavy-bottomed pot or Dutch oven, heat the olive oil over medium-high heat. Brown the neck bones in batches until nicely golden on all sides. This step is crucial for building flavor! Remove the browned neck bones and set aside. Sauté Aromatics: Reduce heat to medium. Add the chopped onion, celery, and bell pepper to the pot. Cook, stirring occasionally, until softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant. Deglaze: Pour in a splash of broth or water and scrape up any browned bits from the bottom of the pot. This is where all the good flavor lives! Simmer: Return the neck bones to the pot. Add the bay leaves, thyme, smoked paprika, salt, and pepper. Pour in enough broth to completely cover the neck bones. Bring to a boil, then reduce heat to low, cover, and simmer. How long to cook pork neck bones on the stove? Fresh Pork Neck Bones: For truly tender, fall-off-the-bone results, I typically simmer them for 2.5 to 3 hours. Check for tenderness with a fork; they should be easily shreddable. Smoked Neck Bones: These can sometimes cook a bit faster due to pre-curing. I usually cook smoked neck bones on the stove for 1.5 to 2.5 hours, depending on their size and how fork-tender I want them. If they're very salty, you might want to par-boil them in plain water for 30 minutes first, then drain and proceed with the recipe. Method 2: How to Cook Neck Bones in a Crockpot (Set It and Forget It!) This is perfect for busy days when you want a delicious meal waiting for you. Ingredients: Same as for the stove-top method. Instructions: Optional Searing: While not strictly necessary for the crockpot, searing the neck bones first (as in step 1 of the stove-top method) will significantly enhance the flavor. If you're short on time, you can skip this, but I highly recommend it! Combine Ingredients: Place the cleaned neck bones, chopped vegetables, minced garlic, seasonings, and broth into your slow cooker. Cook: Cover and cook. How long to cook neckbones in crockpot on low? On LOW heat, I cook them for 6-8 hours, or until they are incredibly tender. On HIGH heat, they generally take 3-4 hours. Tips for the Best Neck Bones Every Time: Don't Overcrowd: Whether on the stove or in the crockpot, ensure the neck bones aren't packed too tightly, allowing for even cooking. Skim the Fat: As they cook, especially with fresh neck bones, some fat will render. You can skim this off the top during or after cooking for a less greasy result. Taste and Adjust: Always taste your broth about an hour into cooking and adjust seasonings as needed. Remember, the flavors deepen over time. Serving Suggestions: My favorite way to enjoy neck bones is over a bed of fluffy white rice, with a side of cornbread and collard greens. The rich broth is amazing for soaking up! No matter *how long your neck bones take to cook*, the wait is always worth it for such a satisfying and flavorful dish. Enjoy your homemade, tender neck bones!
