Remove from heat, squeeze the lemon juice into the saucepan and let cool for about 15-20 minutes. The consistency should be a nice semi-thick glaze the by time it’s cooled.
Cut the lemons in half and scoop out the contents until each half is completely empty. Spoon the mixture into each of the lemon halves, until they’re about 3/4 full. Refrigerate for about 2 hours, then top with blueberries/raspberries (or your toppings of choice)! 😃
