The easiest one bowl lemon loaf recipe!! š
This is a French yogurt cake recipe using La FermiĆ©re yogurt that is so easy, all you do is use the yogurt pot to measure everything!! This French yogurt is sold at Whole Foods in the US, but I also have a recipe for this same cake if you cannot find this exact yogurt and it will come out just as goodš
The yogurt keeps your loaf moist and the fresh zest of lemon or any citrus you like really brightens it up and makes it a perfect spring or summer dessert! In this cake I did fresh lemon and vanilla, but I want to try a fresh orange and honey version next.
Here are both ways to make this, if you donāt have the French yogurt the recipe is a little different but itās still delicious!!
š¹Measurements with La FremiĆ©re yogurt pot:
1 pot of vanilla yogurt
1 tsp baking powder
1/2 pot oil (vegetable or olive)
2 pots sugar
3 pots all purpose flour
2 eggs
Zest of 1 lemon
1 tsp Vanilla extract
šøMeasurements without the yogurt pot
1 cup sugar
Zest of 1 lemon
1/4 cup olive oil
2 eggs
1/2 cup yogurt (plain or vanilla yogurt any type you want)
1 tsp vanilla
Juice of half a lemon
1.5 cups flour
1/2 tsp salt
1 tsp baking soda
š¹Icing ingredients:
1/2 cup powdered sugar
Juice of half a large lemon
Lemon zest
š”Directions are the same for both:
1. Whisk together all of your ingredients in a bowl
2. Preheat your oven to 355° F, then grease your loaf pan with butter or oil (TIP: I also put a piece of parchment paper in the pan after greasing it so itās easier to take your cake out of the pan when itās done)
3. Pour your mixture into your greased pan and bake for 45-50 minutes until a toothpick comes out clean from the center
4. Allow to cool completely on a wire rack
5. While the cake is cooling, make the icing. Mix icing ingredients together
6. Pour icing over your loaf, allow it to sit for a couple minutes, then enjoy!
